I love grilled meats, grilled vegetables and shrimp, and I adore grilled fruit! That’s right – grilled fruit!

Chocolate – Food of the Gods – All About Chocolate

Do you like chocolate? So many do, as it is one of the most widely purchased and consumed delicacies available today. Read more about chocolate and its history.
From the cacao tree comes the base ingredient for chocolate – the cocoa bean. Chocolate has a rich history, steeped in mystery and divine properties, 1435534_18022037throughout the ages as a delicacy, from the Mayan and Aztec societies, whose elite drank an unsweetened cocoa drink, all the way to the modern-day chocolate confection bar that is so common today.

The cacao tree has pods that contain seeds, and it is these seeds that are used to be crushed or pressed to begin the process of making ‘chocolate’, or sometimes at this stage better known as cocoa. These trees were native to the Americas, especially Central America, and this is where the rich history of chocolate seems to begin, over 2000 years ago. Soon, the Spanish conquistadors came and took the seeds back to their country, and the use of cacao seeds to make chocolate type beverages and foods expanded, until, as it is now, chocolate is available in many forms all over the world.

Vegetarian Caprese Appetizer or Snack

Made this as appetizers for the family the other night during our vegetarian challenge. They were a wonderful, fresh, flavorful little treat before the meal. These were pretty and fancy enough they’d be great for a dinner party with friends or on an amuse bouche tray or something. • a piece of avocado slice for each tomato,
  • then drizzle with good-quality balsamic vinegar and a high-quality olive oil and
  • top with some ground sea salt.
  • Cracked or ground black pepper would be good too.

You’ll see we added a small dab of raw goat’s milk chipotle chevre cheese on my version, but you don’t have to put that on yours...

Quick, Healthy Snack & Great Appetizer Tray Item

So tonight, dinner meat was marinating (making Asian orange marinated pork medallions for dinner tonight–recipe to come), and Buffy says, “I know you’re cooking dinner, but I’m hungry now… I need a little something.” Well, perfect! I’d been wanting to make these for a while now, so I grabbed my handy mandoline slicer (click that link if you don’t know what a mandoline slicer is) and went to work on a simple snack I’d been wanting to make for a while.

This is so easy, so ridiculously simple, and yet, so yummy and good. Okay, just take your squash and your zucchini and chop off the end, rinse and dry your veggies, then lay them flat on the mandoline long side and slice them into ribbons. Two of them each makes enough to easily fill a tray for four-six people.

Slice them into nice, thin ribbon like in this picture————->
